Our kiddo has some special dietary needs. He follows the Specific Carbohydrate Diet (SCD) to help manage his Crohn's Disease. He's having a bad flare now that will require surgery and for a little while he's on a liquid diet. Which means coming up with some interesting smoothie ideas! Here's one he likes a lot: Pumpkin Pie Smoothie. This pumpkin smoothie is gluten free, paleo, and SCD friendly. It's also easy to make (and super yummy!) PUMPKIN PIE SMOOTHIE Ingredients: 1 cup pumpkin purée 1/2 cup plain or vanilla yogurt (we use homemade SCD friendly yogurt, but if you're not following SCD diet, any yogurt is fine) 8 T coconut cream 3/4 cup apple cicer 2 T honey 1/2 tsp pumpkin pie spice, plus more for garnish 1 cup ice 1/4 cup whipped coconut cream (optional) Blend all ingredients in blender, sprinkle with pumpkin pie spice. Would also be great topped with whipped coconut cream. Serve immediately. Makes 2 smoothies.
